Neapolitan/Napolitano pizza is a type of pizza which is prepared with simple and fresh ingredients like dough, raw tomatoes, fresh mozzarella cheese, fresh basil and olive oil. This pizza variety does not have any fancy toppings but is worth every bit of it. What makes this pizza different from the rest is that it has more sauce than cheese in it, making it a bit wet and soggy. It is also fairly small in size, around 10-12″ like a personal sized pizza.

Sicilian pizza is often thick crusted and rectangular in shape. It has more dough, sauce and cheese than the Neapolitan pizza. It is seasoned with herbs, onions, tomato sauce, strong cheese and anchovies. Sometimes the sauce is placed on top of the toppings to prevent it from soaking into the thick dough.

This pizza variety is a complete treat to the eyes. Pizza al Taglio is baked in large rectangular trays and generally sold in rectangular or square slices by weight. It was invented in Rome and is quite popular across the world now. The main emphasis is not on the visual aspect rather on the taste of the product and the convenience of the process.

Pizza Quattro Stagioni is prepared in four sections with diverse ingredients. The most interesting thing about this pizza is that each section represents each season of the year. It is prepared by using artichokes, tomatoes or basil, mushrooms and ham or olives. Pizza Pugliese is a subtle preparation of tomato, onion and mozzarella cheese. For variations, different varieties of cheese and gourmet ingredients may be added. Some may use oregano, olives and capers as ingredients. Some may not use pizza sauce at all and substitute half of the mozzarella with provolone cheese or pecorino cheese.
